Before starting this paleo journey, most of our meals came from a bag (I know, cringe) and it is awfully nice to be able to go to freezer and just grab something.<br />

I've found a few different chicken nugget type recipes, and have experimented until I found this one that works very well for us. The breakthrough came the day I accidentally spilled what I thought was way too much paprika in the bowl, and it turned out delicious! What's great is that I can either coat the chicken ahead of time with this mixture and freeze a bag, as well as just keep the coating on hand in the pantry in a sealed container (no guarantees, but I've kept this for a few months and it still smells and tastes like the day I made it).<br />
<br />
Coating:<br />
2 cups shredded coconut<br />
1/2 cup almond meal<br />
1 tsp garlic salt<br />
3 tbsp paprika<br />
<br />
To bake: Coat as many chicken tenders as you like with the coating using a ziplock. Easy to cook in, easy to clean. However, I have noticed that sometimes, especially after cooking fish, that it's hard to get the smell out of my pan.<br />

My microwave was really dirty, so naturally I turned to Pinterest for an easier way to clean it, and discovered the vinegar trick. Take 1 cup of white vinegar, 1 cup of hot water, put it in a pyrex and then put it in your microwave for about 5-10 minutes. Once it's done, just wipe it out with paper towel. Easy peasy, worked great.<br />

It dawned on me that this same procedure should work since Demarle is microwave safe. I put my large Demarle pan in the microwave with the vinegar/water mix and turned it on for 5 minutes. Wow! Looks like it's new and the smell is completely neutral. A lovely friend shared her homemade recipe and it's wonderful! The juice is the trickiest part - ideally, it should be homemade as well. But sometimes I'm in a hurry and I'll use some 100% juice with no added sugar if I have it on hand.<br />

1 cup filtered water<br />
1/3 cup juice<br />
2 TBSP Bragg's Apple Cider Vinegar (whatever brand you use, make sure it has the "mother" in it).<br />
1 tsp honey<br />

Mix and enjoy - if you think this is the grossest drink you've ever heard, just give it a try at least once, you might be surprised.<br />

If you are concerned about the acidity and your teeth - I was as well. You can either sip it through a straw back past your teeth, or just make sure to wait at least 30 minutes before brushing your teeth.<br />

The latest issue of <a href="http://www.paleomagonline.com/" target="_blank">Paleo Magazine</a> has a recipe for beet kvass, and recommends a nifty little device called a Pickl-It jar that is supposed to have fermentation down to a science (doesn't work with kombucha, unfortunately). I'm thinking these are worth the initial investment since I seem to suck at getting this fermenting thing down.<br />

<li>2 cups almond meal <i>(I get this at Trader Joe's - cheapest almond flour I've found)</i></li>
<li>2 egg whites</li>
<li>2 garlic cloves <i>(I use 2 of the frozen Dorot brand garlic cubes, also from Trader Joe's)</i></li>
<li>1.5 tbsp olive or walnut oil <i><br /></i></li>
<li>Dash of salt</li>
<li>Dash of paprika</li>
</ul>

<li>Mix all ingredients together</li>
<li>Put the resulting dough ball onto your silpat</li>
<li>Cover with wax paper and roll out with a rolling pin to about 1/8 inch. Try to get it an even thickness so it bakes evenly</li>
<li>Remove the wax paper</li>
<li>Bake at 350 for 14 minutes</li>
<li>Let cool and break into pieces</li>
</ul>

We eat these most often with a bowl of tuna and paleo mayo. Dip these in and it's like the best tuna sandwich you've ever had minus the bread! I keep them in an airtight container and they don't seem to go stale ever.<br />

I picked up some little flower shaped cookie cutters. We cut them into
shapes and they turned out great. It's a little more tedious to break
them apart, so I won't do this when we're in a hurry! <br />

- As many zucchini, sliced into 1/2 inch pieces (rounds)<br />
- Garlic salt<br />
- Fresh mozzarella (got mine at Trader Joe's, has a minimum amount of ingredients)<br />

<li>Put garlic salt on each</li>
<li>Put pieces of mozzarella on each</li>
<li>Bake for 15 min</li>

I love our turkey bacon and eggs breakfast...but I could use something else in the rotation. I'm familiar with chia gel (let chia seeds set with water, turns into a tasteless, tapioca-like gel that is easy to drink). But I stumbled across chia pudding this morning.<br />

First off, a little bit about the amazingness of chia seeds.<br />

Four tablespoons of chia seeds supply as much calcium as three cups of
milk, as much magnesium as 10 stalks of broccoli, as much iron as
one-half cup of red kidney beans, 30% more antioxidants than

This reminded me how much I like chia seeds, so I looked around at a few different recipes. I found a lot for breakfast puddings and threw something together.<br />

This. is. amazing. It makes enough for the girls and I for breakfast, but we aren't big breakfast eaters.<br />

<b>KPM's Chia Breakfast Pudding</b><br />
4 tbsp chia seeds (I get mine in bulk from either of these websites <a href="http://www.rawlife.com/store/1-lb-Certified-Organic-Chia-Seeds.html" target="_blank">Raw Life</a> or <a href="http://www.therawfoodworld.com/index.php?main_page=product_info&cPath=100395&products_id=1005775" target="_blank">RawFoodWorld</a>)<br />
2 tsp flax seeds<br />
2 cups coconut milk<br />
1 tbs honey<br />
1 tsp cinnamon<br />
1 tsp vanilla<br />
Generous dash of nutmeg<br />
Strawberries (optional)<br />

Mix the chia seeds with 1 cup of the coconut milk. Let them gel for about 15 minutes. Add in everything else but the fruit and let it gel for another 5 minutes. Add the fruit on top and serve.<br />

When I make chia gel, it usually needs to set for 15 min. I'm not sure what it is about this mixture that it didn't gel up as much, but I am going to make it the night before and let it set overnight to get that real tapioca texture.<br />

One can chicken (or cooked chicken with some broth)<br />

Cut up the cabbage and onions into strips.<br />
Saute in the walnut oil<br />
Add a liberal amount garlic salt<br />
Once the veggies are well-cooked, add in the chicken.<br />

I had gotten some of the aged balsamic vinegars before, but was in a hurry that day. Today I had time to really look around and taste - they offer free tasting of everything.<br />

Seriously, you can drink them straight out of a little cup. They can be used as marinades, salad dressings, or even for an ice cream topping (I know you think I'm crazy, but just try it sometime!).<br />

I got the Red Apple, Violet and Lemon Grass Mint this time.<br />

Then I tried out some of the oils. In addition to olive oils, they also have other varieties such as truffle (too strong for my taste buds!) and French Walnut. I had no idea walnut oil existed, but it is spectacular!<br />

I got the French Walnut and an orange olive oil.<br />

They had some ideas - combine the Red Apple Vinegar with the Walnut Oil on arugula, add some nuts and blue cheese. We subbed some goat cheese and it was delish!<br />

They also suggest the orange olive oil with cinnamon pear - kind of wishing I'd picked some of that up! 1/2 cup coconut milk<br />
6 frozen strawberries<br />
2 handfuls spinach<br />
1 tbs vanilla<br />
1 tbs honey<br />
1/2 cup ice (or as desired for thicker/thinner smoothie)<br />

Although Trader Joe's carries their cubed butternut squash year round, I was pleased to see that Costco's industrial size was back in stock for the season the other day.<br />

I threw together the following and it was a hit!:<br />

<li>1 half package Costco cubed butternut squash (this would probably be at least one bag of Trader Joe's)</li>
<li>Half of one large sweet onion, diced</li>
<li>2 tbs olive oil (from <a href="http://www.bistroblends.com/">Bistro Blends</a> - this brand is awesome, try out their heavenly aged balsamic vinegars too!)</li>
<li>Garlic salt to taste (Kirkland brand) </li>
<li>1lb ground turkey</li>
<li>1/4 cup sliced almonds </li>
</ul>
<ol>
<li>Mix the squash, onion, olive oil and garlic salt together and bake at 400 for 30 min.</li>
<li>Fry the ground turkey in time to add it to the squash mixture when it's done</li>
<li> Mix in the sliced almonds and serve. Serve with a yummy green salad.</li>
